5 Minute Millet
Whenever I have an extra 20-30 minutes I cook up a cup of millet that I can keep in the refrigerator to use as the starting point for quick meal or two later in the week.
Basic Millet Preparation
1 cup millet
2½ cup water
1. Bring water to a boil.
2. Add millet and simmer on low for about 20 minutes, until millet has absorbed all of the water.
3.
Let millet cool for 5 minutes.
5 Minute Millet Breakfast
I warm a ½ cup of millet in the microwave for 60-90 seconds, add a little cinnamon, nutmeg, maple syrup or honey and I have a nutritious breakfast ready to go! Sliced fresh fruit, raisins and nuts are awesome additions!
5 Minute Millet Lunch
For lunch I am a big fan of “greens and grain”. I make a salad from whatever I have in the refrigerator and add ½ cup of cold millet for a perfectly balanced lunch. I like to add a grain to my salads; it makes them hearty and filling until my next meal.
5 Minute Millet Dinner
I stir fry up cooked millet and some veggies in olive oil for a quick, easy, and healthy dinner. I like to add soy sauce or grated cheese for flavor!
